Overnight pumpkin oats - a Tasty Thursday video

Breakfast. Everyone touts it as the most important meal of the day, but are those experts real live people? Ones with kids to wrangle, a dog to walk, coffee to make, and teeth to brush before getting out the door? And you want me to add BREAKFAST to the scene?

Dream on.

Unless, of course, you are making breakfast the night before.

PUMPKIN OATS (serves 4-6, depending on morning appetites!)
1 cup STEEL CUT OATS (don't use regular rolled oats for this!)
3.5 cups milk of some kind. Coconut. Almond. Flax. Hemp. Cow. You choose.
1 cup pumpkin puree
1 tsp vanilla
1/2 tsp each salt, cinnamon, and ginger
1/4 tsp nutmeg and cloves

Mix all the ingredients together in a crockpot and cook on low for 8 hours. Stir to combine, and serve.
Excellent with some brown sugar and a splash of cream . . . YUM!
