Avocado salad - a Tasty Thursday post
Avocados. They're delicious, nutritious, and beautiful.
They also offer the coolest presentation possibility around.
The inspiration for this salad came when I saw the lone avocado sitting in the fridge. It had been perfect about a week before, in its happy bowl on the counter, and I popped it into cold central to put it in some kind of stasis. But what do you do with ONE avocado? In my house, one-avocado amounts of guacamole invites even more chaos than normal. This is not a crisis I invite willingly.
But. There's a cucumber. A couple of tomatoes. A slice of red onion.
And a dinner where it's mostly leftover grilled stuff, with both kids out for the evening.
Perfect marriage of texture, flavor, and color. Boom. Plus, the presentation makes it look like I took a lot of time with it.
Yep, a "yes you can" kind of win.
Avocado salad (serves 2)
- 1 avocado
- 2-3 grape tomatoes
- 1 slice red onion
- 1 small cucumber
- vinegar and oil, salt and pepper for dressing
1. Cube avocado.
2. Dice tomato, onion, and cucumber.
3. Toss lightly all together with vinegar (or lemon) and olive oil, then pile loosely back into the avocado skins.
